Q: Are there still enzymes left in milk using the HTST pasteurizer?

A: Yes, from our research enzymes are destroyed at 180 degrees. Which is why our milk is pasteurized below that temperature.

Q: What is A2 beta casein protein?

A: Simply put, cows can produce two kinds of casein protein...A1 or A2. Genetics determine which version they produce. Research shows that the A2 protein is more easily digestible which is why A2 milk has become something that consumers are interested in trying. There are several books and research articles available on the subject if you are interested in a more detailed explanation.

Q: Is this pasteurized?

A: Yes it is. We use an HTST pasteurizer, which quickly heats and cools the milk - to sell milk in Ohio it must be pasteurized.

Q: Do you ever plan to sell containers of cream? I want to make clotted cream, and ultra-pasteurized does not work well.

A: Good morning! At this point in time, we do not have any plans to separate and package cream. Just to clarify, though, Ultra-pasteurized milk is heated to 275 degrees....we use an HTST pasteurizer which heats the milk to 161 degrees. I hope that helps! Thank you for your interest:)
